 Job Requirements included: Serious HEAD CHEF/SOUS CHEF  experience with High-Volume scratch kitchen operations. Particular expertise with FRESH FISH & SEAFOOD. Serious culinary chops, able to create signature dishes and nightly specials. Excellent BOH MANAGEMENT skills, able to run a busy kitchen smoothly & efficiently.

HEAD CHEF to lead a very popular authentic neighborhood Italian trattoria in vibrant Ft. Lauderdale (Lauderdale By The Sea), FL! Charming ‘neighborhood’ trattoria featuring Chef-driven, all-scratch kitchen using only fresh and artisan ingredients (NO walk-in Freezer or Microwaves!), including fresh-made pasta, signature entrees, and hand-crafted wood oven pizzas, and an authentic WOOD-Fired brick oven!

1)  3+ years EXECUTIVE / HEAD CHEF experience with full-serve, scratch kitchen operations. Particular experience with ITALIAN Cuisine including FRESH PASTA and PIZZA required. Additional expertise with WOOD-BURNING OVEN, and Fresh Fish & Seafood strongly preferred. Outstanding Culinary Skills & Creativity, able to create signature dishes and nightly specials. Strong FOOD & WINE PAIRING knowledge.

2) Excellent KITCHEN MANAGEMENT skills. A strong leader, with proven ability to command a fast-paced kitchen smoothly & efficiently, while maintaining cool composure. Control & manage costs, inventories, schedules, ordering, vendor relations, hire, train, & mentor cooks, etc.

3) Hands-on and hard working, able to oversee entire BOH operations and work the line as needed (No “Clipboard Chefs”). A Team Leader who motivates by example and works well with others (“No Prima Donnas here!”). Strong personal work ethic and commitment to excellence.
